BIANG BIANG A NEW RESTAURANT ON LITTLE MARY STREET FOR HAND PULLED NOODLES

Biang Biang (pronounced bee-ang bee-ang) is a type of noodle dish originating from Xi'an, the capital city of China's Shaanxi province. The name itself is onomatopoeic, representing the sound the noodles make when they are slapped against the counter during preparation.

While there are several Biang Biang restaurants worldwide, the one in my photograph, "Biang Biang 遇见长安," is likely an independent establishment specialising in Xi'an cuisine, particularly dishes like hand-pulled Biang Biang noodles, Xi'an hamburgers (roujiamo), and handmade dumplings.

What makes Biang Biang noodles special is their width, texture, and the complex flavours they carry. They are typically wide, flat noodles that are hand-pulled, resulting in a chewy texture and uneven edges. The noodles are often served with a variety of toppings, including meat, vegetables, and a spicy chilli oil sauce.

The "Biang Biang 遇见长安" restaurant aims to introduce and popularise these distinct Xi'an flavours in Dublin, offering a unique culinary experience for those interested in exploring regional Chinese cuisine.
